Honeycake
Ingredients
1 cup of honey
1 cup of oil
2 teaspoons of instant coffee dissolved in 1/4 pint boiling water
1 1/4 cups dark brown sugar
4 eggs
4 cups self-raising flour
1 heaped teaspoon of cinnamon and mixed spice
1 level teaspoon of ginger and bicarbonate of soda
Method:
Beat together the honey, the oil, the coffee and the sugar. Beat in the eggs. Beat in the rest of the ingredients sifted together. Bake in a greased shallow tin in the oven at 325 F for 1 1/4 hours.
